Dream Bars
Preheat oven to 350 degrees. Spray 9 inch glass baking dish with no-stick
cooking spray. Mix together and pat into baking dish:
1 c. all-purpose unbleached flour
1/2 c. unsalted butter
2 t. white sugar
Bake about 10 minutes. Meanwhile, mix together:
1/2 c. while sugar
4 eggs, whites only
1/2 t. baking powder
1 heaping t. all-purpose unbleached flour
1 t. vanilla extract
1 c. pecans, chopped
1 c. coconut
Pour over first mixture in baking dish. Return to oven and bake 20 minutes. Allow to cool completely. Makes 20 bars.
Raggedy Top Bars
1 c. unsalted butter
3/4 c. brown sugar
2 eggs, whites only
1 t. vanilla
1 3/4 c. all-purpose unbleached flour
butterscotch ice cream topping
Preheat oven to 350 degrees. Spray 15 inch by 10 inch by 1 inch baking
pan with no-stick cooking spray. In large bowl, cream butter, brown sugar,
eggs and vanilla. Add flour. Mix well. Spread evenly in baking pan. Bake
20 minutes or until golden crisp. Spread butterscotch topping evenly over
top. Bake 8 minutes. Cool in pan on rack at least 30 minutes. Cut into 2
inch by 1 1/2 inch rectangles. Makes 50 bars.
Maraschino Cherry Bars
For crust:
2 c. all-purpose unbleached flour
1/3 c. white sugar
3/4 c. unsalted butter, softened
For filling:
4 eggs, whites only
1 c. white sugar
1/3 c. all-purpose unbleached flour
1 1/2 t. baking powder
1/2 t. salt
1/2 t. vanilla extract
10 oz. jar maraschino cherries, drained, chopped, reserve juice
1/2 c. walnuts, chopped
For frosting:
2 T. unsalted butter, softened
1 3/4 c. white sugar
3 to 4 T. reserved cherry juice
2 to 3 T. flaked coconut
Preheat oven to 350 degrees. In medium bowl, combine pie ingredients
until crumbly. Press into 13 inch by 9 inch pan that was sprayed with no-stick
cooking spray. Bake 12 to 15 minutes until lightly browned. In large bowl,
combine all filling ingredients and pour into crust. Bake 20 to 25 minutes or
until toothpick inserted into center comes out clean. Allow to cool. In small
bowl, combine all frosting ingredients, except coconut. Beat until light and
fluffy. Spread frosting over cooled bars. Sprinkle with coconut. Makes 3 to 4
dozen bars.
Chocolate Chip Nut Squares
1/2 c. all-purpose unbleached flour
1/2 t. baking powder
1/4 t. salt
2 eggs, whites only
1/2 c. white sugar
1 t. unsalted butter, melted
2 t. hot water
2/3 c. walnuts, chopped
1 7 oz. package semi-sweet chocolate chips
Preheat oven to 325 degrees. Butter an 8 by 8 by 2 inch baking pan. In
medium bowl, combine flour, baking powder and salt. In large bowl, add
egg whites and gradually beat in sugar. Add butter, water, nuts and
chocolate chips. Mix thoroughly. Add flour mixture gradually and mix well.
Turn mixture into baking pan. Bake 25 to 30 minutes. Squares are done
when toothpick inserted into center comes out clean. Cut squares and remove from pan. Can eat warm or allow to cool. Makes 20 squares.
