Baked Fudge
8 eggs, whites only
1 1/2 c. white sugar
1/2 c. Hershey's unsweetened cocoa
1 c. unsalted butter, melted

Preheat oven to 325 degrees. Butter the bottom and sides of a 9 inch by
12 inch baking pan. In medium bowl, with electric mixer, cream egg whites
and sugar. Add melted butter and combine well. Add flour and cocoa and
combine well. Pour batter into pan. Set pan with batter into a slightly larger
pan with about 1/2 inch of water. Bake 45 to 60 minutes or until crusty on

top and soft inside. Serve warm with a scoop of ice cream.
